In Cuba, food serves as a metaphor for he national identity

Preparing Cuban dishes while respecting traditional recipes specific to different regions or territories, and explaining the history of Cuban cuisine—including its origins and evolution—are the core objectives of the new Cooking Course launched by Cubanacan S.A. and held at the Hotel Comodoro in Havana.

Food serves as a metaphor for Cuban identity—a symbol of the nation itself. The country’s cuisine reflects its mixed heritage, shaped by the diverse ethnic and cultural components (food products, preparation methods, table etiquette, ritual meals, etc.) that gave rise to the Cuban nation and remain essential to our identity.

In partnership with Cubanacan hotel properties, the course covers main courses, side dishes, and desserts.

The program also includes competency-based training, a specialized digital resource pack, and an examination and certification process administered by Formatur (the Hotel and Tourism Schools System).

The course will feature 30 iconic Cuban dishes, integrated into the topics outlined in the curriculum.

Registration remains open for the following dates: 1st edition (July 27–31), 2nd edition (August 10–14), 3rd edition (August 17–21), and 4th edition (August 31–September 4). Subsequent editions will take place throughout September and October.
